Ready-made solutions for pressing challenges: Tamaki at the "Appetizing Compromise" forum
St. Petersburg hosted the "Appetizing Compromise" professional forum, bringing together manufacturers, chefs, and restaurateurs. Participants discussed key challenges facing the restaurant industry, such as staffing shortages, kitchen workflow organization, and maintaining consistent dish quality.
The forum had previously taken place in Novosibirsk. This time, the professional community gathered in St. Petersburg to share experiences and discuss issues restaurants encounter in their day-to-day operations.
At the Tamaki booth, guests were offered two types of rolls—shrimp and salmon—along with a selection of sauces. Particular praise went to Tamaki’s Unagi, Wasabi, and Burger Sauce with Cucumber. The latter drew attention with its fresh cucumber notes and tangy flavor, which perfectly complemented familiar flavor combinations.
Staffing shortages emerged as a major topic of discussion. For restaurants, this issue goes beyond merely finding employees; when a new person joins the kitchen team, they must be quickly integrated into the workflow while ensuring the dishes retain the taste guests expect.
Ready-made sauces help streamline these processes. They eliminate the need to prepare sauces from scratch, carefully measuring proportions and striving for the right consistency every time. For instance, Tamaki’s Kimchi and Spicy sauces can be incorporated directly into dishes following established recipes. This approach is more intuitive for new staff and simplifies training and quality control for the head chef.
Chefs at the forum noted that ready-made solutions are particularly valuable for processes where it is important to reduce the number of steps involved and minimize the extent to which the final result depends on an individual employee's experience. The "Appetizing Compromise" event in St. Petersburg demonstrated the high demand for solutions that enable kitchens to operate faster and more efficiently without complicating technological processes. In this context, ready-made sauces are evolving from mere ingredients into essential tools for the professional kitchen.
